Bike Rack and Full ADA Access Ramp Are Open
The bike rack is in front of the construction fence where the parking lot opening used to be. If the construction crew needs more space, they will block the ADA ramp for short periods of time. We have signs up with alternative access details, please use the front steps to the front door. We listed our phone number for folks who need the ADA access ramp so that a store manager can come out and help you.

LOCAL TOMATOES ARE HERE! 🍅 - Holley Family Farms is loading the co-op up with their delicious varieties of tomatoes and the housemade team is busy at work getting these into new dishes! Behold fresh roasted salsa, made from local, organic, tomatoes... grab some chips and dip in!
You can find our new housemade salsa in the grocery fridge section next to the refrigerated salsas and also in the prepared foods grab-and-go case by the beer.
Our executive chef, James, is very particular about which sauces he is going to make available. It took over a year of the entire management team pleading with him to give us hot sauce at the burrito bar. We are so pleased that he finally caved on the mini salsa packs for his burritos. Next time you see James, please thank him for allowing us all the freedom to choose what sauces we can add to our co-op burritos! This is slightly a joke but not entirely 😂

Peanut Butter Chip Gluten Free Brownie
OOEY GOOEY GLUTEN-FREE BROWNIES! - Our housemade team has been hard at work coming up with new delectable baked goods offerings for you. We initially tried to launch the organic (no hydrogenated fats) version of the famous Reese's choc pb cookie. No joke, it took us almost a year to find a perfectly salty and sweet peanut butter chip that was not filled with total garbage.




While that cookie was delectable, we had a hard time with consistency... and nobody likes having an incredible cookie one day and a slightly subpar cookie two days later. We decided to put that cookie into brownie form instead and the results have been consistent and decadent!
Please try one and give us your feedback - We have customer comment cards, just ask a cashier to hand you one. We take all customer feedback very seriously and our managers respond to comment cards on a weekly basis. BIGGEST LITTLE MUSHROOMS

🍄 Meet one of the co-op's local mushroom producers, Walker Sauls. Walker and his brother Andrew started cultivating edible gourmet mushrooms 3 years ago and as of last year, they have been creating their own medicinal mushroom tinctures! 🍄
Biggest Little Mushrooms offers a multitude of gourmet mushroom varieties including, lion's mane, king oyster, and shitake. Their tincture line includes Lion's Mane, Cordyceps, and Chaga - all made with organic cane sugar, making them safe for folks with corn allergies.

You are likely familiar with the terms Omega 3 and Omega 6 fatty acids, but what do those terms mean and how do they affect the body? Both omega 3 and omega 6 fats are polyunsaturated fatty acids, meaning they have many double bonds, and the three and six refer to where along the fatty acid chain the double bonds occur. Some of these fatty acids have anti-inflammatory effects in the body, while others are pro-inflammatory. Omega 3 fatty acids (*ALA, EPA, DHA) are more anti-inflammatory and some omega 6 fatty acids have anti-inflammatory effects as well (primarily GLA and DGLA), while the majority of other omega 6 fats fall into the pro-inflammatory category.
In order to properly control inflammation, the ratio of omega 6 to omega 3 fats consumed should be somewhere around 4:1 to 2:1. Due to a large influx of omega 6 rich processed oils/fats in the Western diet, the average ratio consumed today is around 16:1 to 20:1. This imbalance leads to chronic inflammation, which can be traced back as the root of a large amount of the chronic illnesses seen today.
At the co-op, we try to make it easy for our customers to find items that support an omega 3 rich diet. One of those ways is by offering grass-fed and finished meats from local ranchers. Most of the ranches that we buy from are raising ruminants - an animal (such as a cow, sheep, buffalo, or goat) that has more than one stomach and that swallows food and then brings it back up again to continue chewing it. Ruminants thrive on their natural diet of native grasses, alfalfa, and hay.
So, how does the diet of a ruminant animal affect the omega 6 to omega 3 ratio of their meat? In the same way it affects us. A grass-fed, grass-finished animal will have a higher amount of omega 3 fatty acids present than an animal raised on or finished with corn and other grains; and, therefore, a more favorable omega 6 to omega 3 ratio. In fact, it takes less than sixty days to completely change the omega 6 to omega 3 ratio of an animal that was raised on a grass diet but finished on grain.
Additionally, grass-fed, grass-finished meat is 2-3 times higher in CLA, a polyunsaturated fatty acid that has powerful antioxidant properties. This is due to the fact that grain-based diets lower the pH of the digestive system in ruminant animals, which prevents the growth of the bacteria that produce CLA.
Not only is the polyunsaturated fatty acid profile of 100% grass-fed meat favorable to grain-fed animals, but the saturated fatty acid profile is as well. Of the three saturated fats found in red meat, grass-fed and grass-finished meat is highest in stearic acid, the saturated fat that does not raise blood cholesterol levels.
Be sure to take advantage of the regular meat sales that we have at the co-op. Besides pork & poultry, all of our local meat options come from ruminants which are grass-fed and grass-finished.
