Soup program has begun!! Every day you can now find fresh GF, Vegan and traditional soups in glass mason jars inside of our prepared foods case... perfect for a quick easy dinner when you pair with the new Perenn or Liberty LOCAL breads, sold fresh every day on the bread shelves. All glass mason jars require a one dollar deposit that you will get refunded if you bring back clean glass jars (dirty jars will not be accepted, thank you for your cooperation:) Shown at top: Lemony Red Lentil, Vegan Minestrone, Ribollita, Tofu Thai Curry.
Expertly Proofed Croissants!
We finally have a proofer!!! We have been making fresh organic croissants 🥐(yes, real pastured organic butter & organic flour) from scratch every day for the past few years but the reality is that half of the time they looked pretty weird. Thanks to the new addition of a proofing box, these little gems are now perfectly fluffy, flaky, airy and buttery. 💎 Up until pretty recently, we didn’t even have a dough laminator (which is a commercial machine that rolls out all of the layers of dough for flaky pastries). The coop bakery manager, Amelia, used to roll out every single layer by hand… During the holiday weeks of 2017, she had bruises traveling up the entirety of her arms from all of the rolling she did for the pies, croissants, sticky buns, and other pastries. This woman is beyond incredible and her strength, talent, and perseverance is unparalleled. 🥮 💪🏽🙌🏾 ❤️ We are all so excited to continue perfecting and offering beautiful organic desserts at the co-op. New spring menu plans are underway in the basement production zones so stay tuned👂Fresh bakery goods up every morning at 7:30am when the Co-op opens! 😘

NO MORE BACKYARD BEES??? Senate Bill 389 was announced on March 21st, which could make it illegal to have bees in the city! Click the link above to provide comments for our legislators.
While maintaining healthy bee ecology is a no brainer, it's cool to read the public comments thus far because everyone who posted had educated and passionate reasons as to why they don't support this bill. I particularly liked this bit of feedback:
"This bill would destroy a majority of beekeepers in the Northern Nevada Beekeepers Association. Most of our members are hobbyist beekeepers that live in urban areas. I currently have a few hives in my backyard. My neighbors know I have hives and benefit from their presence. My neighbors benefit because their fruits and vegetables produce more. Wild pollinators benefit in urban areas as well because my neighbors and myself plant extra pollinator flowers. Additionally, many people believe that local honey helps with allergies.This bill would only benefit large beekeepers that bring in hive after almond pollination. They bring hives in to summer and leach honey and pollen from Nevada before moving on to late fall and wintering apiaries outside of Nevada. This bill would also end my ability and the ability of other small businesses to earn a living. I make money from honey, selling bees, maintaining bees, and removing swarms."
The images above were taken out at Jacobs Berry Farms in Gardnerville. That's Jack Jacobs explaining to us that every single drupelet on a raspberry or blackberry is the result of a separate bee pollination visit. Without bees, we wouldn't have berries...and without berries, life would suck.
In 2018 we increased our LOCAL purchasing by $18,006. This 4.47 increase over 2017 is thanks largely to the opening of the Food Shed Cafe, with its locally-focused menu, consistently featuring grass-finished beef, pastured pork, a variety of vegetables, organic eggs, the finest coffee and even bread sourced from LOCAL producers. This is at the heart of what we do and directly ties into one of the co-op's ends policies: creating "a stronger local food system, which includes a marketplace that uses fair and just buying practices to support growers, vendors, and artisans from within our food shed." We do this by paying these producers close to 70 cents on the dollar, which is 5x more than the national average. We also honor the meaning of the word LOCAL in a truly local sense. Many large scale retailers consider any neighboring state 'local' which is a form of greenwashing that gets a pass too often. Rather than claiming San Diego and Portland are 'local' [both over 9 hours and who knows how much fossil fuels away], we let our watershed decide. Obviously water is a scarce resource in the high desert, so if the farm or ranch is fed by the Truckee, Carson, or Walker river systems, thats LOCAL to us. We are thrilled to continue offering as many LOCAL items as we can source, raising the bar one delicious burrito at a time!

This concise info card was designed to help you make an informed decision next time you're at the egg cooler. The chart on the front shows the practices, certifications, and location for each of our egg providers. On the back are quick and easy to understand definitions of this often confusing egg lingo that we hope lifts some of the fog. The food industry is rife with all kinds of misleading [greenwash-y] information - we recently heard egg terminology compared to "a 1984 scenario: war is peace, slavery is freedom, and beak-cutting is humane..." If you've ever wondered what "free range" actually means to the USDA, give it a look next time you're in the store, you might be surprised.
