Foodshed Cafe Deck
Construction Update


The deck is done! The Ryco team wrapped up the construction and painting of our new patio for the Foodshed Cafe this week! This steel structure is a beautiful and sturdy addition to our lovely co-op and will provide breathtaking views of the Eastern Sierras. 
Ryco and team did a tremendous job and we couldn't be happier. They are some of the kindest, most accommodating, and fun folks we've had the pleasure of working with. They even surprised us with their plans to attach a custom-made metal co-op logo to the deck (stay tuned for that) 💚!!!
...and believe it or not, we are even going to gain a parking spot!

Adopt - A - Squash 



Thank you to all of our co-op community members who adopted boxes of squash! It's amazing to see so much support for our local farmers! We also want to thank Briar Patch Food Co-op in Grass Valley and Auburn as well as New Moon Natural Foods in Truckee for ordering hundreds of pounds of Northern Nevada
winter squash.
We still have mixed variety boxes for sale. These boxes are a super value. A 40-pound box of local winter squash is just $50! Boxes are available for pre-order at the link below or in-store. Simply ask one of our cashiers.
Each box will primarily contain Winter Luxury Pumpkins. These beauties are perfect for sweet or savory dishes, and the puree freezes perfectly to be used later!
 Each box will also include a few randomly selected squash from the following varieties:  Acorn, Butternut, Delicata, Spaghetti, and Sugar Pie, etc...

Soaking and Sprouting Nuts and Seeds


Soaking and sprouting is the age-old practice of letting nuts and seeds soak in water to germinate (activate) before consumption to increase the digestibility and bioavailability of their nutrients.
Germination or sprouting neutralizes the enzyme inhibitors that are present in nuts and seeds to preserve the enzymes necessary to catalyze growth until they are exposed to hospitable growing conditions, one of which is water.  Although these enzyme inhibitors serve as protection for the seed, they can inhibit enzyme activity in the digestive tract if not neutralized by the soaking/sprouting process before consumption. 
Nuts, seeds, legumes, and grains all contain phytic acid as the main source of phosphorus for the seed in the early stages of growth. This is often referred to as an anti-nutrient because of the way phytic acid binds to minerals, which inhibits the absorption of vital minerals such as calcium, magnesium, iron, copper and zinc in the body. Soaking and sprouting breaks down a large amount of the phytic acid mitigating the mineral binding effect of the phytates so the vital nutrients become more bioavailable to us. 
The germination process also produces vitamin C and changes the nutrient composition to increase B vitamin content -- mainly B2, B5, and B6.  It also considerably increases carotene, a phytonutrient that is converted to vitamin A in the small intestine.
The method for soaking various nuts and seeds is the same, only the length of time needed to reach full germination varies (see graphic below). Once soaked and/or sprouted, nuts and seeds can be refrigerated and eaten within a few days or they can be dehydrated at a low temperature to dry them out and extend their shelf life beyond that of a freshly soaked nut or seed.
