Desert Oasis Teff & Grain started in Fallon Nevada in 2009, by John Getto and Dave Eckert - two farmers with a big curiosity for a tiny, notoriously stubborn grain. They spent a decade redesigning wheat machinery and fine tuning their process to suit teff's needs, and now offer non-gmo Gluten Free teff and sorghum both in grain and flour form. If you're not already familiar, teff has been used by many cultures for thousands of years and is high in protein and fiber, with a mild nutty flavor that makes it super versatile in the kitchen. if you’ve ever eaten Ethiopian food then you have probably tried teff. It can be used as a salad topping or baked into all kinds of things - from brownie batter to pizza dough. Sorghum is another ancient grain, particularly drought tolerant and just as versatile. It's one of the top foods consumed by the human race - behind only rice, wheat, maize and potatoes. Its got a nutty flavor, and is a great source of energy, iron, zinc and B complex vitamins. Check out this house-made Tiramisu!! Did you know that means "cheer me up" in Italian? We're making these with Local Organic eggs from Palomino Valley, Local Organic Cold Brew Coffee from Alpen Sierra Coffee, and all other organic ingredients. Why? Because ORGANIC MATTERS. If you want to talk about clean eating - getting herbicides, pesticides and GMO’s out of your diet is one of the easiest ways to move towards a healthier shift for 2019. So yeah, you can still have your cake and eat it too. If this little beauty even makes it home, bring your clean jar [with lid and ring] back for a dollar. We wanted to share this heartwarming segment on the co-op that recently appeared in the Down To Earth Composting e-letter...
"I don’t think it is an understatement to say that the Great Basin Community Food Co-op (the co-op) is the epicenter, and greatest advocate, of our local food system.
I’ve been shopping at the co-op for the better part of two years. (gets on soapbox) No doubt, I spend more money on food than I did when I was shopping at Costco**. I’ve also grown to believe that how we spend our money as individuals reflects our values, and our purchases are one of the most impactful choices we as individuals have. We spend A LOT of money over the course of a year, and I view the purchase of every product as a vote for the system and values that created the product. (gets off soapbox)
The co-op makes an uncompromising effort to sell food that supports local, fair, environmentally conscious supply chains. Instead of me wondering if my dollar is supporting a business who is doing good by their people and our planet, I know that when I spend my money at the co-op, it is likely going to people who care about the same things I do.
Two (HUGE) ways the co-op supports our local food shed (and community):
- Established the DROPP program, which distributes locally grown produce to local restaurants and eateries, with 70 cents of every dollar ending up back in the farmers’ pockets (typically farmers get around 12 cents per dollar).
- Run the Round Up For Food Justice Program, which is an effort to make fresh produce more affordable to our most impoverished community members.

For those who don't know, Down To Earth is a bicycle-powered home food waste collection service in town. They pick up your weekly scraps and turn them into beautiful living soil! We all know food starts in the ground, and of course healthy soil = healthy food. There are of course, many educational wormholes you could explore, but if you're short on time, one of the easiest ways us non-farming [read: future farming] types can immediately help is by diverting more of that beneficial matter from a useless fate in the landfill. Did you know that HALF of what the Truckee Meadows throws away is compostable? Food that ends up in landfills emits harmful methane gas. When composted properly, those same scraps produce carbon dioxide - AKA plant food. It may seem radical now but healthy soil is what our future hinges on, especially if we want to be eating foods that aren't genetically modified and doused with chemicals. Lets just say we see what DTE does as being absolutely critical, and we endlessly tip our collective hats to these bold stewards of the soil, they are driving a model that is the wave of the future!
