ROUND UP for FOOD JUSTICE: A little change goes a long way

Our Co-op was built on the premise that we all deserve easy access to healthy, clean, and wholesome food.  The Round Up (RU) Program is helping to bridge a gap in our community by providing weekly fruit & veggie vouchers.  RU also includes a series of 8 weekly classes that focus on general nutrition and health topics and include a simple cooking lesson using whole foods.  In the event that not everyone has a full kitchen, all of the recipes in the course are designed to be cooked in a rice cooker for less than $5 per serving.  READ MORE...

EGGCENTRIC LABELS
All around town at grocery stores we see eggs ranging in price from $1.50 to $9.99 per dozen, bearing many inspiring labels. Egg company websites often picture hens clucking happily in farmyards alongside assurances about their birds’ happiness. But does “cage-free” mean the hens have more freedom to display their natural behaviors? Maybe. Do “free-range” hens ever actually see the light of day? Probably not. To ensure your food dollars support the most healthful, humane, and environmentally sound practices, buy organic, pastured eggs. And, because not all organic eggs are created equal, consult Cornucopia’s organic egg scorecard to find those produced with the best management practices. The Skinny On Fats
 
We've been duped for a lot of years in believing that healthy fats like avocados, coconut oil and ghee were all bad for us because they have saturated fats in them. This propaganda came out in the 80s when sugary additives were on the rise and companies could (and unfortunately still do) make a fortune selling super processed high sugar, low fat items.  Not to mention that the fats commonly used in these products are cheap, inflammation inducing vegetable oils like canola, soy, and corn.
GOOD saturated fats like coconut, nuts, avocado, pastured eggs, organic dairy, ghee and butter can actually help curb sugar cravings and afternoon slumps as healthy sources of these fats are known as short chain fatty acids.  These are kinds of bonds that the body can break down and use quickly for energy, much more rapidly than poly or monounsaturated fats...often times a tablespoon of coconut oil can help stave off that desire to eat something crappy for a temporary boost of energy.  
These healing saturated fats can help us to feel calmer and more stable - possibly due to the fact that our brains are speculated to be nearly 60% fat that need healthy fats to function properly?  One can also experience feelings of lasting satiation, healthier joints, better sleep, and healthier skin.  For an in depth look at the science behind The Skinny On Fats, check out this article brought to you by the Weston Price Foundation.

And it’s taking an awful toll on human rights and the environment.
It’s no accident that we’re disconnected from the people who make our clothes. About 97 percent of the clothes we buy are made by about 40 million garment workers toiling away in sweatshops in faraway countries.
“The True Cost,” a documentary, was filmed in countries all over the world, from the brightest runways to the darkest slums. The film features interviews with the world’s leading influencers including Stella McCartney, Livia Firth and Vandana Shiva.
It’s not a pretty story. Watch the film, may find yourself echoing the narrator’s lament: “My God, we can do better than this.”
