Grown organically by Pauline Hamilton and Marcia Litsinger at Churchill Butte Organics, this beautiful crop is used the world over to flavor and color all kinds of dishes. It intensifies when ground up and mixed into water - you'll only need a few "threads" to adequately flavor a whole gallon of stock or a dish to feed 4.
The threads are the stigma portion of the crocus sativus flower, and packed with powers nutritional and medicinal. Saffron is sometimes called "the sunshine spice" as it is favored for treating depression, alzheimers, and PMS symptoms. It's also full of antioxidants like crocin and crocetin which give the threads their intense red pigment - which by the way will turn your soup, rice, sauce or cake a brilliant golden yellow.
